Skirret, perennial root vegetable, grows about 1 m high and is very resistant
to cold, as well as pests and diseases. Originating in China, Skirret was
introduced into Europe early in the Middle Ages where it was a primary root
crop until it was replaced by the potato. Skirret produces bright white,
pencil-thin roots that are sweet and have a flavour somewhere between potato
and parsnip. The spring shoots may also be eaten and are delicious steamed
and tossed in garlic butter. The root can also be roasted as a coffee
substitute and is believed to cleanse the bladder, treat jaundice and other
liver disorders.
