SQUASH, PERENNIAL - CHILACAYOTE (Cucurbita ficifolia)
Originating from central America, the chilacayote is the only
perennial squash. It's also known as the Fig Leaved Gourd, after
its attractive foliage. Thriving in cool weather, yellow pumpkin
like flowers are followed by very attractive fruit which look like
large watermelons. This perennial climber dies back in winter but
will re-shoot from the dormant root in late spring
Eat raw or steamed when immature like zucchini. It can be used with
stir-fried dishes, or in a fruit salad. Chilacayote has a firm
texture and it will take on the flavours of anything it is cooked
with. It can be used in jams and chutneys.
