Despite being relatively new to Australian gardens, this is one of the
world’s oldest varieties of asparagus dating back to France in the
1860’s.
Purple asparagus is a different variety to green asparagus
and produces sweeter, thicker spears. Its purple colour comes from
the high levels of anthocyanins (potent antioxidants) in the spears. It
has a lower fibre content making it more tender and the whole spear
can be eaten from tip to butt.
